why only ten per dozen ?

is it the regular twelve yolks per dozen with some doubles or is it only ten yolks all singles ?
I think it’s that European chickens are better than American chickens and there are two yolks per egg, so 20 yolks. I think the extra 8 yolks are used as a base for the protective glaze they put on their houses.
At least, that’s not what I learned in school.
